High fiber bread with a bit of extra protein.

Dry Ingredients

1 ½ C oat flour
1 C almond flour
6 T ground flax seed
2 scoops vanilla whey protein powder
1 t baking soda
½ T cinnamon
1 C chopped walnuts
1 T rolled oats (optional)

Wet Ingredients

1 C unsweetened apple sauce
2 ripe bananas
½ T vanilla extract
1 whole egg
1 T molasses (optional)

Directions

Preheat oven to 350 F
Line bread pan with parchment paper

Mix all dry ingredients (except walnuts and rolled oats) first, then add wet ingredients one at a time starting with the apple sauce. After all other ingredients are mixed, fold in walnuts.

Spoon mixture into lined bread pan. Sprinkle rolled oats across surface then drizzle with molasses (optional). Place in over for 50 – 55 minutes. A butter knife inserted in the middle should come out clean. Allow to cool before slicing.

Notes

You could use this same recipe to make muffins, but you will want to drastically reduce the cook time. This recipe would make roughly 12 2″ muffins, and they would take ~ 12 minutes to cook depending on your oven, the color of your muffin tin, and altitude. Cooking is an art as much as a science. Enjoy!
